Sweet Potato Muffins Recipe

Ingredients
- a cup of brown rice flour (organic)
- half a teaspoon of pink Himalayan salt
- 1/8 teaspoon of grounded cloves
- a cup of packed and roasted sweet potatoes (organic)
- 3/4 cups of canned coconut milk (organic)
- a tablespoon of baking powder
- a bit of ground nutmeg
- 3 free-range organic eggs (beaten)
- a quarter cup of coconut flour
- a teaspoon of grounded ginger
- two tablespoons of olive oil
- a tablespoon of ground cinnamon
- half a cup of maple syrup
Instructions
Before you begin preparing your recipe, preheat the oven to 400 degrees Fahrenheit. Next, oil up the muffin tray and poke some holes in the potatoes. Put the potatoes on the middle rack of the oven and cook them for one hour or until they get soft.
When they are done, let them cool down a bit and peel of the skin.
Place the potatoes in a bowl and add the olive oil, maple syrup, and coconut milk. Start mixing them all together until you get a soft mixture. After that, in a different bowl, put all the dry ingredients, mix them, and sprinkle them all over the sweet potatoes.
Now, put the batter in the muffin pan and fill the pan right before it is half full. Leave some space for the batter to rise. Lastly, cook everything for half an hour and see if it is prepared after you have poked it with a toothpick.
